Pancakes have become quite popular nowadays. They are enjoyed by everyone irrespective of their age. Here are a few delicious and easy to make recipes for pancakes.

Buttermilk pancakes

Ingredients
All-purpose flour 3 cups
White sugar 3 tablespoon
Baking powder 3 teaspoons
Baking soda 1 ½ teaspoons
Salt 3/4 teaspoon
Buttermilk 3 cups
Milk ½ cup
Eggs 3
Melted butter 1/3 cup

Instructions to be followed

First, keep ready a large bowl and mix the ingredients such as flour, baking powder, baking soda, and salt. Take another bowl and mix up the buttermilk, milk, eggs and melted butter and beat nicely until all the ingredients are combined well. Slightly rub the frying pan or the griddle with oil and heat it under average temperature. Then, combine the dry ingredients with the wet ingredients and mix them well using a wooden spoon or fork. Stir well so that all the ingredients perfectly combine with each other. Pour a part of the mixture onto the griddle. Cook it until it becomes brown in colour. Flip the sides and continue the process till all the mixture is used up.

Pumpkin pancakes

Ingredients

Milk 1 ½ cups
Pumpkin puree 1 cup
Egg 1
Vegetable oil 2 tablespoons
Vinegar 2 tablespoons
All-purpose flour 2 cups
Brown sugar 3 tablespoons
Baking powder 2 teaspoons
Baking soda 1 teaspoon
Ground allspice 1 teaspoon
Ground cinnamon 1 teaspoon
Ground ginger ½ teaspoon
Salt ½ teaspoon

Instructions

Combine the milk, pumpkin puree, egg, oil and vinegar in a bowl. Take another bowl and mix up the flour, baking powder, brown sugar, allspice, cinnamon, ginger, and salt in it. Add the pumpkin mixture into this and stir it well until it blends in. Take a slightly oiled frying pan or griddle and heat it under moderate temperature. When it is heated well, pour some of the mix into the griddle and cook it until the bottom side turns brown in colour. Cook the other side as well so that both the sides are equally prepared. Allow it to set. Then serve it.

Blueberry pancakes

Ingredients
All-purpose flour 3 ½ cups
Baking powder 1 tablespoon
Salt 1 teaspoon
Sugar 1cup
Eggs 3
Butter or margarine 1 stick
Frozen blue berries 1 cup
Whole milk 1 cup
Vegetable oil or butter as per the need

How to prepare this

Like in the preparation of other pancakes, combine the ingredients such as flour, baking powder, salt and sugar in a large bowl. Take a medium-sized bowl and beat the eggs into it slightly. Add the flour mixture into this and whip it nicely. Add the combination of butter and 1 cup of milk into this mixture and gradually introduce this into the other mixture. Check whether the mixture is too thick or too thin. Add milk to the mixture if you think that it is exceedingly thick. Whip it nicely until all the ingredients are perfectly blended. Take a griddle and season it well. Heat it under moderate temperature. Add oil to the pan if you feel that the pan is not properly seasoned so that the pancakes will not stick. Pour 2-3 tablespoons of mixture into the pan. Gently add 7-8 blueberries on the pancake. Cook it for 3 minutes until you see bubbles on the surface of the pancake. Make sure that the bottom side has become fairly brown in colour.Then, cook the other side until it becomes brown in colour and allow it to cool. It would be ideal if you serve it with maple syrup and additional butter topping.
