To master how to cook Wonton Soup, you must learn the art of folding the wontons. Take a wonton wrapper and put a spoonful of filling on it, now moisten all the edges. Fold the wrapper lengthwise so that both the ends meet. Slowly push the edges of the filling so that it moves towards the center. Let your thumbs be in this position, while you fold the wrapper one more time. Now, push the corners up and hold between your thumb and index finger, while you wet the corners. Finally, bring the two ends together so that they overlap. Press firmly to seal the wrapper. The folded wrapper will now look like a nurse’s cap. You could watch a video on how to cook Wonton Soup to clearly understand the folding process.
Once all the wrappers are ready with filling, its time to boil them. Put the wontons carefully in a large pot of boiling water (the pot should be large enough for the wontons to move freely), and boil for 7 – 8 minutes. The wontons will be cooked when they rise and float in the water. Take them out and set aside.
Boil the chicken stock and the green onions in a cooking pot. Add the cooked wontons to it and boil for a minute or two. Add a few drops of sesame oil after you take the soup off the heat. Serve hot.
